Sleepover!

A couple months ago my adorable nephew had a bit of surgery. To make things a little easier on the family we had his older brothers down for a couple days. We met Burtons in Richfield and picked up the cousins. We had to stop and take pictures of this since who really could pass up a transport trailer of corvettes. My boys love watching for fast cars on the road. As it is, Hammy thinks we drive a Ferrari. Maybe 'cause I'm such a good race car driver, but probably because it's almost red. We had a good drive home, even though the DVD player in the car wouldn't work. Luckily, Robert had his laptop so we watched the better part of Fantasia 2000. Which, yes, they all enjoyed. And still beg to watch.

One cousin was on the bed but he didn't want to miss out on the fun so he climbed in with Hammy. 
The last night Peter ditched Jack upstairs came down to his own bed.
Next time, I'm thinking tent on the lawn.

Surprise!

This pretty much sums it up.

To make a long story short, five boys ages 5 and under was a real treat. The weather was excellent so they mostly played in the dirt the whole time. We checked out the Prom decorations going up every day. And besides that, I honestly have no recollection of anything else. I do know we turned a lot of heads trekking through town. And when I met my Mom and brother on Wednesday, they still had enough to play at the McDonalds playplace for a couple hours. Whew. I just sat and watched. But we'd do it again in a heartbeat.


The surgery was a great success and the babe is as cute as ever. Seriously, check out those eyes.

Peanut Sauce

A few years ago our friends took us to the Pizza and Noodle in Springdale. They bought us a Thai Peanut Chicken Pizza. I had never heard of such a thing but it was delish. So, a few weeks ago I made peanut sauce for the first time. We sauteed onion, garlic, yellow squash, zucchini, and matchstick carrots and wrapped it in a tortilla with rice and peanut sauce. It was a great way to eat veggies. Since then we've also used it on said pizza and stir fried veggies over rice. We're not exactly vegetarian but we go with the use sparingly advice. I love the flavor this yummy sauce adds and since it keeps well, it is perfect for every day I don't really want to cook.

Peanut Sauce
5 Tablespoons Soy Sauce
3/4 Cup Sugar
4 cloves minced garlic
7 Tablespoons water
1/2 Cup Peanut Butter

In a small saucepan, stir soy sauce, garlic, sugar and water and simmer about 10 minutes then stir in the peanut butter. This saves for several weeks in the fridge.

Thai Peanut Veggie Wraps
1 small yellow onion chopped
2 cups julienne summer squash
2 cups matchstick carrots
2 cloves minced garlic

In a wok stir-fry carrots, squash and onions in 2 Tablespoons oil until crisp-tender. Add garlic and stir fry 2 minutes more. To serve: warm tortillas and fill with rice, veggies and peanut sauce.

Carrot slices
Roasted Peanuts
Sliced Onions
Whatever other veggies: peppers, sprouts, squashes, etc.
Cheese: White flavor. I think ours was mozzarella

Peter was lucky enough to go to preschool the second half of the year. He got big enough to miss a couple naps a week so he spent it playing and learning with his friends. His part in the program went something like this, "My favorite part of preschool was digging in the dirt." Yup. That's Peter for you. However, he loved to do his homework and was happy he filled up his book check out paper.

My brothers David and Ben came down for a couple days. My boys were in heaven. Two more people to wrestle and tease and chase around. We went on some adventures and really had a good time. Eric calls them both Beji, even though he knows they aren't the same guy. They're both great uncles.

Spanish Class Pinata Party

Robert teaches a Spanish class at the High School. All four students were Seniors and when May hit they were pretty trunky so I made them a deal that if they got through their book, we'd have a party. Spanish is second hour so it's a little hard to have food when usually I think of chips and salsa. We branched out a little and made Churros and Hot Chocolate. We still had Horchata and sodas but it was a good little brunch.

We also lovingly handcrafted a Pinapple Pinata. It was a pineapple since that's where the term comes from. We had to include something educational here, it is school after all. My boys had a fun time hanging out with the big kids.  It ended up being a 2 day party by the time it was all said and done.

Everybody had fun, umm, I guess we could say batting. Some people had better form than others. Eric shed some tears when it started to break but those soon passed when he saw the candy coming down. It really was a good time.

Artisan Bread

This post goes along with the French Onion Soup. It is impossible to find a baguette in this town so I have resorted to making my own. At the Kanab Women's Forum this year I went to a highly informative bread making class by Heather Wood, one of the best bread makers in the area. She had at least 15 different samples of delicious things for us to try. Unfortunately, I haven't even tried more than 1 recipe but that 1 recipe is so blessedly simple that I can make myself baguettes or bread worthy of Nutella any time I want. I have made this into larger french breads, hard rolls, one big round wheel that I cut into wedges, and bread sticks. It's crunchy on the outside and soft in the middle. AND I can make it on Sunday. Because of how the raising works it doesn't fall or keep us waiting while it rises. I might have to make some today.

Artisan Bread in Five Minutes a Day

3 Tbsp. Instant Yeast
3 Tbsp. Kosher Salt
6 Cup. Lukewarm Water
13 Cups All-purpose unbleached flour (gently scoop then sweep the top level with a knife)

Mix either by hand or with a mixer just until everything is evenly moist. Do not knead. It will be like a heavy muffin mix.
Place in a container at least twice as big as the dough.
Loosely cover with a well fitting lid.
Allow the mixture to sit at room temperature about 2-5 hours or overnight.
Do NOT punch down. Store in the fridge after rising time with the lid on tight. It is easier to use cold.


To bake:
Dust the top with flour and pull out the amount of dough you want. Shape.
Place on a greased or cornmeal covered baking pan or stone.
Preheat oven to 450 degrees.
Let the dough rest 20 minutes before baking.
Put a broiler pan on the bottom rack of the oven.
Slash the tops about 1/4 inch deep for venting steam. You can make an X, parellel slits or tic tac toe slits.
Dust with flour. I like to brush with olive oil and sprinkle on Italian seasoning, sea salt or garlic and Parmesan.
Immediately before baking pour 1 cup water into the broiler pan.
Place the bread in the oven and bake about 25-30 minutes. The bread will have a nice brown crisp crust.

For Later:
The leftover dough can be kept in the fridge and used within 7-14 days. Or you can freeze it and thaw overnight in the fridge.
Leftover bread can be reheated at 350 for 5-7 minutes.


That looks a lot more complicated then it really is. Truly - mix it, rest it, shape it, cook it. And then, you can have fresh bread a couple days later too. I used really crunchy bread to make a yummy baked french toast recipe. And of course, in the French Onion Soup. Or dipped in egg for delicious French Toast. Or just plain.

French Onion Soup

There are a few recipes I need to put in cyber space so I can find them if I'm not at home. This one is pretty delicious. The picture doesn't look that good because I need to work on my food photo skills. Until then, you just have to try it yourself.

The first time I ate French Onion Soup I was on a date in High School. I didn't really like onions back then but it sounded so tempting, I think it was the French part of the name, that I had to try it. The cheese was so thick they provided scissors with which to cut it. That's how I like my cheese. Mmmm.

French Onion Soup
  • 6 Cups Thinly Sliced Onions
  • 1/4 Butter
  • 3 10 1/2 oz Condensed Beef Broth
  • 1 teaspoon Worcestershire sauce
  • 6-8 slices French Bread Toasted
  • Swiss Cheese

In a large sauce pan, cook onions covered in butter about 20 minutes or until tender.
Add beef broth and Worcestershire sauce, 1/2 teaspoon salt and a dash of pepper.
Bring to a boil and simmer for a bit.

Meanwhile:
Broil cheese on toasted french bread until it melts. Then float in your soup.
Or
Float the bread in a hot bowl of soup. Sprinkle with cheese and pop the whole thing under a broiler until it's crispy.

Solar Eclipse

Remember when we had an eclipse party? Well, it was about the best party I ever had. We live right on the center line of the eclipse and had an incredible viewing location.We had 31 pair of Eclipse Glasses and I think we could have used another package.

Halloween - Last Back Post

I should have started this blog on Halloween when people first started asking to see the Buzz costume. It's only eight months in coming but now, I should be all caught up. Well almost. It all started when our local party planner invited us to a Famous Couple's Halloween party. Maybe because we had recently watched Toy Story 3 we finally settled on Spanish Buzz and Jessie. I don't think we have any picture of Buzz with the rose in his teeth but he had one, and he speaks pretty good Spanish. I had a fun time making it and never really finished it but in the end, he even had Andy written on the bottom of his shoe. The party was a great success. I don't have pictures of everyone 'cause I wasn't the official photographer so if you'd like your picture up, go ahead and send it to me. ;)

I also had a little costume party for the kids but was too busy managing to take many pictures. We did a costume fashion show there. The little kids were so cute showing off their different costumes. We had fun pinning the face on the pumpkin, tossing pumpkins and playing musical chairs. Kids are great.

Eventually there was a flashing, red "laser" here.
